Virgin Coconut Oil is the most versatile of all vegetable oils. It has been used in India as a key ingredient in Ayurvedic medicine for over four thousand years and is still a primary form of medical treatment for millions of people. In South America, virgin coconut oil is drunk by the glass as a means of overcoming illness and speeding up recovery.
It is used in hospitals around the world to treat digestive or malabsorption problems, and is commonly given to infants and children who have problems digesting other fats. For this same reason, coconut oil is a primary ingredient in infant milk formulas.
Scientific studies as far back as the 1950s already proved the health benefits of coconut oil. Up until the early 1980s coconut and other palm oil were widely used around the world in food preparation.
In the mid-1980s the American Soybean Association began capitalizing on the public’s fear of saturated fat and its perceived association with heart disease to carve out a niche for its soybean oil and kill the tropical oils. Even though the Surgeon General of the USA, Dr. C. Evekertt Koop, himself declared the tropical-oil scare “foolishness”’ the campaign was successful in destroying the reputation of coconut and palm oils.

Virgin Coconut Oil is primarily composed of Lauric acid, with concentrations of up to fifty-three percent (53%). Interestingly enough, the only other substance in nature that has a comparably rich composition of Lauric acid is mother’s milk. Studies show that this high Lauric acid content is beneficial in warding off and destroying viruses, bacteria and other pathogens. It also actively builds the body’s immune system.

Virgin Coconut Oil is rapidly metabolized by the body and, unlike most oils or fats, is directly converted to energy. This, in effect, aids in weight loss as it speeds up metabolism. In a sense, Virgin Coconut Oil can be considered a “low-fat” fat.
Applied topically, virgin coconut oil alleviates eczema and other mild skin ailments such as diaper rash. As massage oil, it is quickly absorbed by the skin and does not leave a sticky film behind. It has also been used traditionally to treat hair and scalp conditions.

Being a saturated oil, Virgin Coconut Oil is much more stable than olive oil under normal cooking temperatures and does not break down into free radicals as quickly as other oils.
Research shows that olive oils, like all mono and polyunsaturated fats, promote platelet stickiness. The stickier blood gets, the greater the risk of blood clots and cardiovascular problems. At the same time, unsaturated fats are known to suppress the immune system and even kill white blood cells.
The Farm’s ANH Virgin Coconut Oil is also naturally more resistant to rancidity and oxidation than other edible oils. With a laboratory tested free fatty acid (FFA) concentration of only 0.05% in the bottle, this oil does not need any preservatives to avoid rancidity.
The labor-intensive process of Absolutely No Heat (ANH) process means that we can only produce a few precious litres each day. Our VCO is non-hydrogenated, non-refined, non-bleached, non-deodorized. The Farm at San Benito ANH Virgin Coconut Oil solidifies at temperatures below 25oC. If this happens to your oil simply place the bottle in warm water until the oil is liquid again.
